A tour of the uniquely designed smokehouse is inspired to look like a traditional Scottish building called a cleit. A peat roof and stonewalled buildings from the bygone years. (Search on google St. Kilda and Cleit).
Learn how the local alder wood is prepared by hand using an axe and used to fire the smokehouse and to create the smoke. I will talk about the various techniques of hot and cold smoking, wet and dry curing.
Smell the secret 6 spice mix blend used in the current recipe to cure the salmon. Can you guess any of the spices?
Finally the best bit tasting, Sample 4 different canapes.
A twist on a Cullen Skink, Smoked salmon mousse on beetroot and blini, two additional tasting spoons.

The award-winning, Isle of Skye Smokehouse was launched in 2017 by John Corfield who’s passion and dedication for excellence was forged from his time working as a Chef at the Ritz Hotel and Gordon Ramsay’s 3 Michelin Star Restaurant in London.

With 10 year's professional cheffing experience and 8 years running Scalpay View B&B the opening of the smokehouse was a logical progression after perfecting the art of hot smoking salmon for his B&B guests. The business is a relatively new startup home business. Already picking up awards for the Alder Hot Smoked Salmon and supplying high-end hotels and restaurants throughout Skye and Lochlash.

You will visit the external workings of the smokehouse and a tour outside the kitchen. Also we will have a talk about the smoking processes. Canapes and drinks in the lounge of our B&B overlooking the sea loch and Isle of Scalpay. Might be outside on good weather days. Look out for the resident otters. Due to strict food hygiene practice, there will be no access inside the kitchen area or smokehouse. Don't worry this won't detract from the tour.

John is an engaging host who is a great storyteller and has a great passion for what he does. The background to how he came to be doing what he does was fascinating and his passion to create a quality product shines through. The tour of his custom kitchen and hand built smokehouse (cleit) was fantastic. Finally the tasting portion of the tour, sitting outside looking across the water to Scalpay was exceptional. All elements of the tasting were delicious and wonderfully presented! I would highly recommend this tour and John’s hot and cold smoked salmon. The best I have tasted!

John is a great host, who made us very welcome, he is very informative about the smokery and his journey to get there, the tasting was superb, set in an excellent location made all the better by the great weather to go with it, the exquisite flavours were a treat for the tastebuds, if you like your smoked fish, then this is a must on your visit to Skye.

Really interesting and passionate host. The story of the Smokes House is as fascinating as the process of smoking fish. To finish you get to try the product in a variety of ways. It’s excellent. The food was beautifully presented, tasted amazing and John was funny, warm and clearly very talented.
