I love this 24-hour, high-end cocktail bar and restaurant on the 40th floor of the Heron Tower in London’s financial district. Come for sunrise and gawp at the bankers nursing Champagne, mixing with hipsters from nearby Shoreditch who aren’t ready to call it a night yet. Or just gaze out of the huge windows at one of the best views in the city. The cocktails. This is home to some of the most innovative bartenders around. They’re famous for doing things like gin and tonic sorbets served using dry ice at the table.
