A few of the Bors specials: coconut-chilli pumpkin-cream soup with roasted pumpkin seeds, ginger-blueberry forest-fruit soup with mandarin panna cotta; caramel-French mustard pheasant ragout soup; white wine-juniper potato stew; and the sandwiches Hambagett and French Lady.

Bors Gastro Bar
10 Kazinczy u.pened in the summer of 2012, Bors Gastrobar on Kazinczy Street is a real curiosity in Budapest. They deserve an A+ for their special soup-and-sandwich combinations, made of carefully selected ingredients. They cannot be truly compartmentalized: their daily-refreshed specials include soups and baguettes with unique flavoring, various vegetable stews, and pasta creations. A few of the Bors specials: coconut-chilli pumpkin-cream soup with roasted pumpkin seeds, ginger-blueberry forest-fruit soup with mandarin panna cotta; caramel-French mustard pheasant ragout soup; white wine-juniper potato stew; and the sandwiches Hambagett and French Lady.

The former confectionery now serves its guests as a bistro, so in addition to the classic coffees and French pastries, you can order breakfast dishes until 11:30am, after which bistro cuisine and even live music take centre stage. Déryné also provides international newspapers, which you can leaf through on the pleasant terrace.

They source their ingredients exclusively in Hungary, to make sure they only use fresh goods, never deep-frozen. It’s important to point out that you shouldn’t expect traditional Hungarian flavours in Halkakas; the focus here is on experimentation. Try the smoked carp pâté, the catfish gyros, the unmatched carp crisps or the carp tempura. You can wash it all down with Hungarian wine, craft beer or drinks created from home-made cordial. The place is an ideal choice for an unconventional lunch or, with occasional live music, Halkakas is also great for dinner.

The ingredients are high-quality, the smoked duck meat, hams and homemade cheeses come from Badacsony, and it is also worth trying their white wine and elderflower champagne. The menu changes monthly, always incorporating seasonal ingredients, and dishes are served with garnish and decorations. Luckily, the trademark carrot cake never goes off the carte.

In addition to the wines by noted wineries, they also serve artisanal and bio-wines, and products by less known young Hungarian winemakers. They invite a small band for almost every day of the week and they also host wine tastings in a wonderful atmosphere. Their cheese and meat plates consists only of home-made delicacies prepared with traditional smoking, pickles from Vecsés and an old-school bread selection. The brick wall surfaces and the huge ceiling height evoke the air of the lofts of New York. Doblo is a special, unpretentious, friendly, honest, and receptive place.
