Founded by sisters Ada and Ebe Cóncaro in the 1970s, Tomo 1 is now run by chef-patron Federico Fialayre, youngest son to Ada. The restaurant is set within the iconic Panamericano Buenos Aires Hotel in the city centre and was recently refurbished to include a vast open wine cellar storing noted wine expert Fialayre’s vast collection. The family approach shines through in the restaurant’s service, with the chef himself interacting with diners and sometimes even taking orders personally.
