Since Sel de Mer closed, I sought a low-key restaurant unafraid of contemporary French dishes with prodigal sauces. 'Fond' is colloquialism for 'stock' and richly found in their rural, deep flavors.

For a nice cross-cultural bite, Falansai is Français meets Vietnamese cuisine; it is a nice tangent away from authentic French-Viet culinary dishes and more health conscious than traditional dishes.
