A prehispanic journey to the stars
If you are interested in the relation between astronomy and the design of prehispanic architecture, choose this experience.
So start your day visiting a unique prehispanic ceremonial site known as Cañada de la Virgen (Canyon of La Virgin), while learning how it's ancient astronomers followed the cycles of the sun, the moon and Venus. Through the eyes of Dr. Rossana Quiroz -who was part of the excavation team-, we will explore the original pilgrimage route and understand how archaeological spaces, ceramics, burials, carbon dating and DNA, tell a long untold story about the Laja River original people, settlements and landscapes.
Tune in with the sky and submerge under the cosmological spell of Mesoamerican sacred entities and philosophical concepts.
Also, take into account that the astronomical features of this antique temples and traditions are best understood when explained by the same researcher that actually discovered such features.
I will love to give you the personal attention you diserve.
Cook & Dine: Mole & Mexican Salsas
Having met in a vast and beautiful courtyard, we will proceed to the large kitchen where the cooking lesson will commence. We will begin by preparing some delicious salsas, followed by an authentic and traditional Mexican mole, tasty enmoladas, and mexican rice. (Please let me know in advance if you have special dietary needs). I will educate you on the ingredients, tell you about the culinary and nutritional values, and how to prepare and cook each part of the meal. I will teach you the history and cultural importance of the Mole and how it used to be the “Food of the Emperors”, reserved only for the upper class of the Mayan and Aztec society. During the lesson you will enjoy a pure cacao chocolate drink, and be enticed to explore your environment: the cozy den with its fireplace, library and piano; and the surrounding courtyard with its organic gardens and gorgeous landscapes. Having prepared the delicious meal, we will sit down and dine, enjoying the meal and engaging in wonderful conversation. Natural wine and mezcal tasting with the producer
About 7 years ago, driven by passion and curiosity, and tired of over processed industrial options on the market, we ventured into mezcal and natural wine making to make drinks that conserved the energetics of the plants they were made of and the earth they grew in. Fast forward to now - our distills have won international medals and natural wine finally starts making some noise in Mexico and we become the first winery in Mexico to make natural wine in clay vessels and zero sulfites. Our winery is inspired by the Georgian tradition of making wines in kvevris and our orange (amber) wine is a tribute to this beautiful country.
In response to new demand we open a tasting room in San Miguel de Allende, our hometown for over 30 years, to bring our beverages to the public from our ranch where they're produced. Here you’ll be able to:
- Taste a wide range of fermented and distilled beverages (over 20 different labels), specifically natural wine and mezcales, all naturally and artisanally produced by us at our ranch.
- Tasting is accompanied by a generous offering of entrees (sweet and salty), all curated by the Marcelo to bring you a taste of his favorite products he’s been finding locally and around Mexico.
- Browse Marcelo’s eclectic vinyl record collection and curate your own musical background for the tasting experience.

Early Risers Hike & Coffee
Seize the day while you are here in San Miguel de Allende and wake up before the sun. (make sure to set your alarm with the correct time zone) Once you reserve I will send you the exact time we meet which obviously varies depending on the season. We'll meet in the main square and start with some easy stretching and from there we will hike up the cobblestone streets to catch the sunrise and see some beautiful views. Bring layers as it can be cool in the morning and warmer as we walk back down. This is a great opportunity to take some pictures without the crowds. This is for people who enjoy nature, who don't mind waking up very early, can walk up steep hills at a steady pace and be able to handle uneven terrain. On top of the hill we'll take a moment of silence to reflect on our intentions for the day or whatever each person wishes to reflect upon. Then we will meander our way back down for more beautiful views via a different route unknown to most tourists and even some locals, culminating in a little cafe for coffee or tea!
