Then, we will learn from the ancient and new techniques used at the chinampa to produce a sustainable an organic agriculture. Chinampa traditional cooking amongst the Xochimilco canals
In the South of Mexico City, we find Xochimilco, where pre-hispanic natives built the Chinampas on the lake. These are small islands used for agriculture, that through time, they conformed a great network of canals, in which we will sail through time, enjoying nature and the presence of its birds. In the morning, we will journey on a cayuco (canoe) through the canals, the same way the natives did before and still do. Here we will realize that this is a living ecosystem that has survived urbanization. Once we arrive at our Chinampa, we will meet Adela, a Mexican traditional cook/chef with a passion for food who will share her favorite Mexican recipes passed down through generations with you. Adela and Carlos will share the essential ingredients and flavors of these traditional recipes, including a variety of chilies and emblematic vegetables, and of course the "maize to tortilla'' process. You will have the pleasure of walking through the farm to hand pick out some of the ingredients that will accompany your delicious meal that you assist in the cooking process with Adela. Before sitting down and enjoying your delicious creations together at the table surrounded by the calmness of this magical land. This is a local culinary experience where you will learn how to cook various Mexican ingredients using traditional family recipes. In this interactive, intimate and fun.

Xochimilco y Fiesta Mexicana
Cook mole praising Mexican food goddess
During this experience we will cook, talk, learn, feel, taste, smell, understand, pay tribute to the original goddesses of food in this land and finally eat Mole. But first let’s prepare some of the most delicious tacos to eat as a snack meanwhile we cook the complex recipe of Mole Sauce. You know how eat inspires to cook and vice versa ;) This dish is a World Heritage, so be prepared to receive a cultural transmission; cooking mole involves history, music, wisdom, customs, legends, nature, environment, humour, tradition and of course the warmth of Mexico. I will teach you how to cook Mole step by step, so you can entertain your family and friends when you return home and share this beautiful and delicious heritage. Other things to note We are going to cook with chile, and some nuts so take precautions if you are intolerant, mole will be a little spicy. Please arrive on time so we can share and have a good time ;)
