Plant Based Pueblo Cooking From Scratch
Come hungry for healthy plant-based eating, with your mind open to learning about a side of Mexico’s cuisine and culture with a longer history in Yucatan than cochinita pibil! Pueblo cooking remains simple and connected to the land, using milpa ingredients like squash, corn, tomatoes and fresh beans. You’ll learn the process of making tortillas from scratch, starting with grinding fresh nixtamalized corn into masa. We’ll show you how to form the tortillas by hand and cook them on the comal, all with local cook Laura's expert guidance. We will also make a host of accompaniments unique to the Yucatec Maya using local produce including a refreshing agua de chaya con limon and a typical Mayan dessert, whether a treat made with Yucatecan honey and squash seeds or a seasonal fruit or vegetable stewed with honey and cinnamon. Whatever we make will be inspired by the seasons, made from scratch, and served with the freshest of tortillas. You will leave with a full belly and a brain full of new knowledge, straight from the source Other things to note Yucatan's pre-hispanic diet was almost exclusively plant based, making this class perfect for anyone who loves food; vegans, vegetarians, and omnivores alike. Also naturally gluten-free and healthy! We encourage everyone to take part in the food preparation.
