Tarese del Valdarno, a Slow Food Presidium. Among the few butchers that offer this excellent cold cut is the butcher's shop "Macelleria Sani" di Bucine Made from heavy pigs, weighing around 200kg. To produce this huge stretched pancetta, they use the back and belly of the animal, with the precious presence of part of the pork loin. Great choice for Steaks too and also some good delicacies not necessarily from meat.
